From the very beginning, the BottleHouse was about one thing, community.  

Our goal was to create a gathering place for our friends and neighbors. We swapped out TVs and private tables for board games and community seating and of course provided plenty of locally brewed beer.  Our first brewing system was comprised of several 15-gallon kettles. We spent the first 2 years honing our skills, refining our process and defining our brewing philosophy. During this period we brewed over 100 unique beer styles and learned quite a bit in the process. 

Year 3 brought with it many changes to the BottleHouse. In addition to the installation of a 7 barrel brewhouse, we began in earnest to focus a substantial portion of our production to mead. Although we had been making mead in previous years, we now had the experience and equipment to take production to the next level.  Our mead portfolio expanded to include some of our favorite styles including complex melomels such as Metropolis and barrel-aged traditional meads such as  The Gaurdian.  

Not only did mead become a priority for us in year 3, but our barrel-aged sour beer program also began to come into its own.  Our barrel house, which once consisted of only 2 bourbon barrels, grew to 15 barrels (as of Sept 2018 we are at 60 barrels) and we released our first 2 sour beers, Eventyr and Vox Maris. The limitless creative potential in conjunction with the complexities that a barrel aged sour program entails continues to inspire and challenge us. 

As we begin year 10 our passion for the art of beer, mead and cider making increases daily.  Through our 3 taprooms (Cleveland Heights, Lakewood, Shaker Heights), we have been able to share our passions and our products without distributing our beer to retail stores.  This model allows us to stay true to our belief that communities deserve a welcoming place to gather and share life over a well-made beer.
